Shea A.J. Comfort, Consulting Wine & Cider Maker

Hello, and thank you for your interest in my consultation services. I specialize in working with start-up and existing wine and cider producers, both amateur and professional.

 

Over the past 18 years, I have made wine in lots ranging from 1-gallon jugs to 3,000-gallon tanks. However, wine volume does not equal importance! 

 

I’ll work with you to develop the techniques needed to create the style of wine you have in mind. Whether we will be working on a single carboy or a cellar full of tanks and barrels, my goal will always be the same: helping you to make the best product possible.

For any topic/technique we cover, I will always make sure you understand the steps needed from a theoretical and practical point of view, so you can confidently use this knowledge on your own. Of course, I am always available by phone if needed, as well.

I advise on all aspects of winemaking including:
 

  • Yeast & Bacteria pairing for building complexity and richness 

  • Improving fruit profile, colour stability, overall complexity and positive mouthfeel characteristics

  • Balancing/correcting musts, pre-ferment

  • Using oxygen to shape/structure wines (and avoid reduction!)

  • Improving wines during ageing

  • Guided tasting trials

  • Blending

  • SO2 management

  • Cellaring strategies

  • Stability
